Lee Edward Schafer, age 88, of Crookston, MN, died peacefully at his home early Thursday morning, January 22, 2015. Lee was born in Crookston on November 4, 1926 to Leo G. and Reona (Werkman) Schafer, and named after his father, Leo, and grandfather, Reinder Edward Werkman. Lee graduated from Crookston Central High School in 1944. Soon after graduation, he entered the US Army and served in the Asiatic-Pacific Theater of Operations during WWII. After receiving his honorable discharge on August 28, 1946, he returned home and enrolled at the University of Minnesota in Minneapolis, where he earned a Bachelor's Degree in 1949. Lee later attended, and taught, at the University of Denver, graduating from there with a Master's Degree in Business Administration in 1960. Over a period of many years, Lee enjoyed an exciting career in the hospitality industry. He was engaged in the capacity of either senior executive or consultant for luxury hotels, gourmet restaurants, domestic and foreign airlines, and passenger steamships, as well as hospitals, universities, colleges, schools, and the Alaska pipeline construction camps. His life's work provided the necessity, and opportunity, to enjoy extensive domestic and foreign travel. In 1999, Lee returned to Crookston, where he enjoyed maintaining the 120 year-old home of his boyhood, and pursuing his love of gardening. Lee is survived by his friend and companion of 40 years, past business partner and brother in Christ, Howard Williams; his beloved sister, Carol Jean Fay, and her two daughters, Cindy Lee Arnich and Susan Carol Fay Johnson. He was preceded in death by his parents. May God richly bless Lee's memory.
The life of Lee Edward Schafer will be celebrated at a memorial service to be held at 11:30 a.m., Sunday, January 25, 2015, at Grace Orthodox Presbyterian Church, 5718 36th Street SW, Fargo, ND, with Pastor Greg Hoadley, officiating.
